Step-by-Step Instructions
Step 1
Prepare the ingredients.

Step 2
In a pot, add scallion segments and ginger slices along with sake. Place chicken thighs in the pot and bring to a boil over high heat.

Step 3
Once boiling, reduce heat to medium-low and simmer for 10 minutes before turning off the heat. Let it rest for another 10 minutes.

Step 4
Remove the chicken from the pot and let it cool down.

Step 5
While cooking the chicken, prepare a dressing by mixing two tablespoons of light soy sauce, one tablespoon of sugar, a small amount of MSG, and a teaspoon of Sichuan peppercorn powder in a bowl. Add toasted sesame seeds and vegetable oil to taste.

Cut scallions into thin strips.

Step 7
Arrange the sliced scallions at the bottom of a serving dish.

Step 8
Remove meat from chicken bones, gently pound with a rolling pin to soften the meat.

Step 9
Tear the softened chicken into fine shreds and arrange over the scallion strips.

Step 10
Pour the prepared dressing over the shredded chicken.
